Delicious Spiced Banana & Walnut Cake with Cream Cheese Frosting for Dessert

I can’t tell you how excited I am to start baking up some of my favorite Fall recipes this week. The weather has finally cooled off and I am ready for everything Fall. During the summer our family dinners every night would vary. Sometimes because of different activities or work, everyone wouldn’t be there or we would eat later and pretty casual. Now that school has started and we are in such a nice routine, it’s nice to have dinner back on schedule with everyone at 6pm each evening. I like to make a little dessert at least a few nights a week too. This quick & easy homemade Spiced Banana & Walnut Cake with Cream Cheese Frosting is a wonderful treat and a great way to use up those bananas on your counter!

Ingredients for Spiced Banana Cake

I love making banana bread and baked oatmeal with my ripe bananas, but I love a good banana cake too. This banana cake is moist and flavorful, complete with those warm Fall spices you long for in your baked goods this time of year. Warm cinnamon, nutmeg, ginger and clove are mixed into this moist banana cake batter and mixed with finely chopped walnuts for a cake that can be ready to bake in the oven in under 10 minutes!

Finely Chopped Walnuts for Spiced Banana Cake

If you’re making this cake when you are short on time, after it comes out of the oven and cools for a little bit, you can speed up the process by popping it into the refrigerator to cool completely. When it’s ready, whip up your homemade Cream Cheese Frosting, grab a spatula and smooth it on! It doesn’t have to look perfect…that’s what I love about this dessert!

Homemade Cream Frosting for Spiced Banana Cake

To make this cake extra special (and even more yummy) I like to toast a handful of roughly chopped walnuts to sprinkle on top of the frosting after they cool along with fresh banana slices! Yum!

Spiced Banana & Walnut Cake

Ingredients

  • For the cake:
  • 2 cups flour
  • 4 eggs, at room temperature
  • 1 cup canola oil
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/4 tsp. ginger
  • 1/4 tsp. cloves
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 3 large, ripe bananas,mashed
  • 1/2 cup walnuts, measured then finely chopped
  • For the frosting:
  • 1/4 cup unsalted butter, softened
  • 1 (8 oz.) container cream cheese, softened
  • 1 tsp. vanilla
  • 3 - 4 Tbsp. heavy whipping cream
  • 1 3/4 cups confectioner's sugar
  • 1 cup walnuts, roughly chopped and lightly toasted

Instructions

  1. Preheat your oven to 350 degrees.
  2. Prepare a 9 x 13 pan by lightly spraying with nonstick cooking spray.
  3. In your Kitchen Aid mixer, combine the sugars, eggs and oil well.
  4. Sift the flour, spices,baking powder, soda and salt.
  5. Mix the dry ingredients into the wet ingredients.
  6. Stir in the mashed banana and the finely chopped walnuts, then scrape down sides of bowl to make sure everything is well incorporated.
  7. Pour the batter evenly into the pan.
  8. Bake for 40-50 minutes or until a toothpick inserted into the cake comes out clean.
  9. Do not over bake.
  10. Remove from the oven.
  11. Cool completely before frosting
  12. For the frosting:
  13. In your Kitchen Aid Mixer, whip together all ingredients except the heavy cream and confectioner's sugar.
  14. When combined, slowly add the sugar a little at a time on low-or you will have a mess.
  15. Slowly add the heavy cream.
  16. When all sugar and heavy cream is incorporated, whip everything together well until it is a creamy frosting like texture.
  17. Frost the cake and garnish with toasted walnuts.
  18. * To toast the nuts, place the nuts in a small saucepan on low and stir around for about 5 minutes.
  19. Cool completely before placing them on the top of the cake.
  20. Serve with fresh banana slices on top too!
  21. Enjoy!
