Fresh Apple Coffee Cake for Fall Breakfasts & Brunches

Welcome to the first weekend of Fall! Do you have any outdoor, Fall plans? Attending a fun festival, visiting a pumpkin patch or local cider mill, picking fresh apples or enjoying a little wine tasting while taking in the beautiful Autumn colors at a local vineyard? Those are some of my favorite Autumn things to do, but first and foremost comes the food. Fall weekends are the best because you can take your time and really enjoy your family, you home and your breakfast. This delicious Fresh Apple Coffee Cake with a hot cup of coffee is how we are starting our day today!

Ingredients for Fresh Apple Coffee Cake

Apples are wonderful and to me, it just wouldn’t be Fall without them. Every year our whole family heads to the local apple farm and we spend a few hours picking fresh apples. My favorite apples to bake with are Cortland apples, but I love McIntosh apples for this purpose too. In addition to those tasty varieties, we always pick up a few others just snacking on too. Pumpkin can wait until October, in my kitchen I’m busy baking with apples right now! 🙂

Making Fresh Apple Coffee Cake

Freshly picked, chopped and juicy apples are mixed into a cinnamon spiced moist batter and topped with a delicious buttery walnut crumble for the perfect Autumn coffee cake that you can share with your loved ones this season.

Enjoying a slice of this coffee cake with a cup of hot coffee in the morning out on your patio or deck while the crisp breeze blows and colorful leaves gently fall from the trees sounds wonderful doesn’t it?

Fresh Apple Coffee Cake Ready for the Oven

The best part about this recipe is that it’s really simple. You can put this together in about 15 minutes, bake it in the evening and you’ve got it ready to go for the next day. I love waking up to something yummy that’s all ready to eat…even if I did have to make it myself. By the way, this recipe is also freezer friendly, so make a few of these coffee cakes over the next few weeks, and you will have them available for company around Thanksgiving and the Holidays! Yum!

Delicious & Simple Fresh Apple Coffee Cake

Fresh Apple Coffee Cake

Ingredients

  • For the Cake:
  • 3 cups Cortland (or your favorite baking apples) apples, peeled and chopped small
  • 3/4 cup brown sugar
  • 3/4 cup white sugar
  • 2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 2 cups all purpose flour
  • 2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 eggs
  • 1 tsp. vanilla
  • 1/2 cup canola oil
  • 1/4 cup applesauce
  • For the Crumble Topping:
  • 1/2 cup unsalted butter, melted
  • 3/4 cup brown sugar
  • 1/4 cup white sugar
  • 1 cup all purpose flour
  • 1/2 tsp. cinnamon
  • 1/4 cup finely chopped walnuts
  • pinch of salt

Instructions

  1. Preheat your oven to 350 degrees.
  2. Peel and chop your apples, and set them aside.
  3. In your Kitchen Aid mixer combine the sugars,dry ingredients and spices.
  4. Add the eggs, vanilla, oil and applesauce and mix until incorporated. The batter will look a little dry but don't worry. 🙂
  5. Add the apple mixture and stir well until it becomes a nice batter.
  6. Pour the batter into a lightly greased 9 x 13 baking dish.
  7. In a small mixing bowl, combine the crumble ingredients and mix together well and create the crumble with a fork.
  8. Sprinkle the crumble evenly on top of the coffee cake.
  9. Bake for 45-55 minutes (ovens and cooking times may vary) or until a tooth pick inserted into the cake comes out clean.
  10. Cool for 20 minutes, cut and serve.= if you would like this warm.
  11. If not, cover and enjoy the next day.
  12. Left over cake may be covered and stored in the refrigerator and reheated in a low oven or microwave the next morning.
  13. You may also freeze left over cake in an airtight container.
  14. Serves 8-12 depending on how large you would like the pieces.
  15. Enjoy!
