You know the kind of day when you are nonchalantly browsing through your cupboards looking for something chocolaty?  Well, I had that kind of day today and the Halloween candy in my cupboard just wasn’t going to cut it.  I really wanted something with a deep, dark chocolate flavor.  Sitting in my baking cupboard was Special Dark Cocoa and bag of Special Dark Chocolate Chips that I bought the last time I was at the grocery store.  I felt like they were calling my name!   Before the children got home from school, I whipped up a few dozen of these delicious Special Dark Chocolate & Walnut Cookies.  They turned out wonderful, made my house smell amazing and were just what I was looking for!  Crisp on the outside, chewy chocolate goodness on the inside and loaded with dark chocolate chips and walnuts make these my new favorite chocolate cookies.  When my boys came through the front door, they couldn’t wait to put their things away and give these a taste.  Warm cookies with a cold glass of milk is definitely a special after school snack!  The next time you are craving some chocolate and nothing in your cupboard will do, give this recipe a try.  I promise you won’t be sorry!

Special Dark Chocolate & Walnut Cookies

Ingredients

  • 2/3 cup unsalted butter, softened
  • 2/3 cup shortening
  • 1 1/4 cups sugar
  • 1 cup brown sugar, packed
  • 2 eggs
  • 1 1/2 tsp. vanilla extract
  • 3 cups all purpose flour
  • 1/2 cup Hershey's Special Dark Chocolate Cocoa
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 (12 oz.) bag of Hershey's Special Dark Chocolate Chips
  • 1 cup coarsely chopped walnuts

Instructions

  1. Preheat the oven to 375 degrees.
  2. In your Kitchen Aid Mixer, combine the butter, shortening and sugars and cream together until fluffy.
  3. Add the eggs one at a time and beat after each addition.
  4. Add the vanilla and mix.
  5. Scrape down the sides of the mixer to make sure everything is well blended.
  6. Add the dry ingredients and mix until a nice dough comes together.
  7. Stir in the walnuts and the chocolate chips.
  8. Place Tablespoon sized scoops of dough onto an ungreased cookie sheet.
  9. Bake for 8-10 minutes.
  10. Remove from the oven and let rest on the cookie sheet for 1 minute before moving to a cooling rack.
  11. Makes about 4 dozen cookies.
  12. *To freeze, let cool completely and store in a freezer friendly container or freezer bag.
