<p>Have you ever had warm piece of buttered toast sprinkled with cinnamon and sugar for breakfast in the morning?  If you haven&#8217;t, let me tell you that it&#8217;s absolutely wonderful!  Cinnamon is such a warming flavor and on a cold winter&#8217;s day, it&#8217;s so nice to wake up to that comforting aroma.  When I was younger, my grandparents and my mother always had a little jar of cinnamon and sugar (you can make your own- you don&#8217;t have to buy it in the spice isle <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /> )  in the cupboard ready to go.  As an adult, I still love that flavor and so does my family.  These Cinnamon &amp; Sugar Oat Muffins are a great, convenient alternative to cinnamon &amp; sugar buttered toast.  You can make these muffins ahead of time, pack them for a snack, or grab one on the go and still enjoy a homemade, satisfying breakfast.  These muffins aren&#8217;t overly sweet and highlight the real flavors of the oats and cinnamon.  I like these muffins because not only am I getting that delicious flavor I loved as a child, I am also giving my children a great start to the day with oats.  When your children are on Winter Break next week, or you are entertaining guests at your home, fill your kitchen with the sweet smell of these tasty muffins.  It&#8217;s the perfect Winter treat!</p>

<p>I hope your first week of fall is off to a great start!  While most fall baking tends to be on the absolutely delicious, but not so healthy for you side, I decided to make some muffins that you can feel good about.  These muffins still have a warm, fall flavor, but they are on the light side and are a great start to the day. <a href="http://www.amazon.com/gp/product/B004VLVHK6/ref=as_li_tf_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=B004VLVHK6&amp;linkCode=as2&amp;tag=cozcouliv-20">Whole wheat flour</a><img decoding="async" style="border: none !important; margin: 0px !important;" src="http://ir-na.amazon-adsystem.com/e/ir?t=cozcouliv-20&amp;l=as2&amp;o=1&amp;a=B004VLVHK6" alt="" width="1" height="1" border="0" />, fresh apples, cranberries and pecans make for a wonderful texture in these fall inspired muffins.   They are a perfect breakfast for those mornings that your children are so warm and cozy in their beds that they just don&#8217;t want to get up and there&#8217;s not a lot of time for breakfast.   I have come to realize that even though I plan out our mornings , sometimes there are just going to be those days where it&#8217;s a mad dash to get out the door.  I think that&#8217;s why I like to bake so many muffins ahead of time.  I like to be prepared for days like that.  However, these aren&#8217;t only for breakfast.  Pack these muffins along as a snack or even as a light lunch paired with some Greek yogurt.  If you decide to make a double batch of these and freeze some for later, they also make a great early Thanksgiving breakfast before you get busy with that turkey!</p>

<p>I love the smell of these fresh Blueberry Muffins baking in the oven first thing in the morning.  These simple, buttery, berry muffins sprinkled with just the right amount of raw sugar are a preferred summer breakfast in our house.  With a busy household, these are also convenient to take on the go.  After picking blueberries, this is the perfect, simple recipe to make with your children.   My little ones love helping in the kitchen and being able to eat the food they helped prepare.  They are so proud of themselves:)  If you have picked a great amount blueberries, these muffins freeze very well too!  If you know me, you know I love having my freezer stocked full of meals and baked goods.  This is the best time of year to do some freezer cooking because you can use all of the fresh fruits and vegetables from your garden and be able to enjoy them even after their season is done.  What are your favorite fresh summer meals to freeze?</p>

    </div><p id="zlrecipe-ingredients" class="h-4 strong">Ingredients</p><ul id="zlrecipe-ingredients-list"><li id="zlrecipe-ingredient-0" class="ingredient" itemprop="ingredients">1 cup unsalted butter, softened</li><li id="zlrecipe-ingredient-1" class="ingredient" itemprop="ingredients">2 cups sugar</li><li id="zlrecipe-ingredient-2" class="ingredient" itemprop="ingredients">4 eggs</li><li id="zlrecipe-ingredient-3" class="ingredient" itemprop="ingredients">4 cups all-purpose flour</li><li id="zlrecipe-ingredient-4" class="ingredient" itemprop="ingredients">4 teaspoons baking powder</li><li id="zlrecipe-ingredient-5" class="ingredient" itemprop="ingredients">1 teaspoon salt</li><li id="zlrecipe-ingredient-6" class="ingredient" itemprop="ingredients">1 cup half and half</li><li id="zlrecipe-ingredient-7" class="ingredient" itemprop="ingredients">1 quart of fresh blueberries</li><li id="zlrecipe-ingredient-8" class="ingredient" itemprop="ingredients">2 Tbsp. raw sugar, to sprinkle on top</li></ul><p id="zlrecipe-instructions" class="h-4 strong">Instructions</p><ol id="zlrecipe-instructions-list" class="instructions"><li id="zlrecipe-instruction-0" class="instruction" itemprop="recipeInstructions">Preheat the oven to 350 degrees.</li><li id="zlrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">Line your muffin tins with paper liners and set aside.</li><li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">In your Kitchen Aid mixer. beat the butter and the sugar until fluffy.</li><li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">Add the eggs, one at a time, beating well after each addition.</li><li id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">In a separate mixing bowl, sift together the flour, baking powder, and salt. </li><li id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Add the flour mixture to the butter mixture alternating with the half and half until well incorporated but be careful not to over mix.</li><li id="zlrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">With a wooden spoon, gently fold in the fresh blueberries.</li><li id="zlrecipe-instruction-7" class="instruction" itemprop="recipeInstructions">Fill the paper lined muffin tins 3/4 full with batter and sprinkle the tops with raw sugar.</li><li id="zlrecipe-instruction-8" class="instruction" itemprop="recipeInstructions">Bake for 25-30 minutes until puffy and golden brown.</li><li id="zlrecipe-instruction-9" class="instruction" itemprop="recipeInstructions">Makes 24 muffins.</li></ol><div class="ziplist-recipe-plugin" style="display: none;">3.1</div><a id="zl-printed-permalink" href="https://www.cozycountryliving.com/blueberry-muffins/"title="Permalink to Recipe">https://www.cozycountryliving.com/blueberry-muffins/</a></div><div id="zl-printed-copyright-statement" itemprop="copyrightHolder">Copyright  ©2017 Cozy Country Living ®All Rights Reserved</div></div></div></p>
