<p>It&#8217;s almost summer and I can&#8217;t wait! Fun in the sun, my garden full of fresh vegetables and last but not least- picking fresh berries. Oh, how I love fresh berries! Strawberries, Raspberries, Blackberries and Blueberries, Yum! In the summer I could live off of them. Usually I eat fresh berries by themselves or over my cereal or yogurt, but for a special treat, I love berries in a homemade pie. Summer wouldn&#8217;t be summer without some of those freshly picked berries being baked into a buttery crust and then topped with vanilla ice cream or whipped cream for dessert. <p>To get started on these Mini Mixed Berry Pies, I&#8217;m making the filling. If berries &#8220;aren&#8217;t ripe for the picking&#8221; yet in your neck of the woods, it&#8217;s absolutely fine to grab the fresh berries at your local grocery store. Rinse your berries and gently toss them with sugar, a little flour and cinnamon in a medium mixing bowl.</p>

    </div><p id="zlrecipe-ingredients" class="h-4 strong">Ingredients</p><ul id="zlrecipe-ingredients-list"><li id="zlrecipe-ingredient-0" class="ingredient" itemprop="ingredients">2 pie crusts (homemade or store bought)</li><li id="zlrecipe-ingredient-1" class="ingredient" itemprop="ingredients">2 puff pastry sheets</li><li id="zlrecipe-ingredient-2" class="ingredient" itemprop="ingredients">1 1/4 sliced fresh strawberries</li><li id="zlrecipe-ingredient-3" class="ingredient" itemprop="ingredients">1 1/4 cups fresh blueberries</li><li id="zlrecipe-ingredient-4" class="ingredient" itemprop="ingredients">6 oz. fresh blackberries</li><li id="zlrecipe-ingredient-5" class="ingredient" itemprop="ingredients">6 oz. fresh raspberries</li><li id="zlrecipe-ingredient-6" class="ingredient" itemprop="ingredients">1 cup sugar</li><li id="zlrecipe-ingredient-7" class="ingredient" itemprop="ingredients">1/4 cup flour</li><li id="zlrecipe-ingredient-8" class="ingredient" itemprop="ingredients">1 tsp. cinnamon</li><li id="zlrecipe-ingredient-9" class="ingredient" itemprop="ingredients">ice cream or whipped cream for topping when serving</li></ul><p id="zlrecipe-instructions" class="h-4 strong">Instructions</p><ol id="zlrecipe-instructions-list" class="instructions"><li id="zlrecipe-instruction-0" class="instruction" itemprop="recipeInstructions">Preheat your oven to 400 degrees.</li><li id="zlrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">In a medium sized mixing bowl, gently toss together the berries, sugar, flour and cinnamon until well combined.</li><li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">Transfer the mixed berry filling mixture to an 8 x 8 glass baking dish.</li><li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">Bake for 30-35 minutes or until the filling is all bubbly.</li><li id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">Remove from the oven and let it cool completely. (You can do this step the day before and store the filling in the refrigerator if you wish)</li><li id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Plug in your <a href="http://www.dpbolvw.net/click-7662625-11372738-1412958103000?url=http%3A%2F%2Fwww.williams-sonoma.com%2Fproducts%2Fbreville-personal-pie-maker-bpi640xl%2F" class="instruction-link" target="_blank">Breville Personal Pie Maker</a> and wait for the green light to come on and tell you it's ready.</li><li id="zlrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">Using the included dough cutter, cut 4 bottom crusts and place them in the pie maker.</li><li id="zlrecipe-instruction-7" class="instruction" itemprop="recipeInstructions">Using the included dough tamper, gently push down to make a spot for the filling.</li><li id="zlrecipe-instruction-8" class="instruction" itemprop="recipeInstructions">Fill each pie with 1/3 cup of the mixed berry filling. Be careful not to overfill.</li><li id="zlrecipe-instruction-9" class="instruction" itemprop="recipeInstructions">Using the other smaller size of the included pie crust cutter cut the dough for the top and place it over the filling. <p>Is there anything more comforting and inviting than a homemade pie, fresh from the oven?  There&#8217;s just something about a homemade pie, made with loving hands that really makes dessert time special.  I&#8217;ve grown up watching my grandmother and mother make and serve pies in their kitchens.  Everyone always rushes to the table to get their slice.  Whether the pie was served a la mode or just plain, the delicious memories of eating homemade pies throughout my childhood always remind me of the comforts of home.</p>

<p>The crust is such an important part of your pie, so I don&#8217;t skimp here.  A good crust starts with good ingredients.  I like to use <a href="http://clvr.li/1B4wUz8" rel="nofollow">Bob&#8217;s Red Mill</a> Organic Unbleached All Purpose White Flour for my baking.  This high quality flour is used by professional bakers and produces high, well-textured loaves of bread equally as well as it produces light, airy baked goods and it&#8217;s a kitchen staple that&#8217;s incredibly versatile and perfect for all of your baking needs.</p>

<p>This Rustic Apple Cranberry Pie is just perfect for the the Holidays!  Juicy sliced apples are tossed with fresh cranberries, sugar and warm cinnamon to create a sweet filling that goes perfectly with the flaky, buttery, hand rolled crust. <p>I love pies that aren&#8217;t quite perfect looking.  Pies that look like your grandmother made them in the afternoon just because. Remember this is a &#8220;rustic&#8221; pie, so it doesn&#8217;t have to be perfect, it&#8217;s rustic.  My family always says that it doesn&#8217;t really matter what it looks like as long as it tastes good!</p>

<p>While the weather outside still hasn&#8217;t quite made it&#8217;s mind up about what season it is,  I have decided to move on and pretend it&#8217;s already Spring!  I spent this past weekend getting a head start on my &#8220;Spring Cleaning&#8221; and organizing in my kitchen.  That darn forced air furnace that seemed to be running nonstop these past few months sure created a lot of dust in tricky places!  It felt good to clean appliances, go through the cupboards and wash the walls but by the end of the afternoon, I was tired and ready for a break.  What perfect way to end a day of Spring cleaning than with a delicious Spring type dessert?!</p>
<p>This Easy Lemon &amp; Coconut Cream Pie is a cinch to make and your family will love it!  You can start with a good quality store bought crust, or homemade if you prefer.  Since I was kind of wiped out from cleaning, I just used a convenient store bought one! <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" />  The delicious cream filling is made with coconut milk, coconut flakes, heavy cream, sugar,  fresh lemon zest, eggs and a little flour and is cooked in the microwave!  That&#8217;s right.  The microwave!  You can combine the filling ingredients and give them a good whisk and then cook in 1 minute intervals, whisking well after each minute until it cooks and thickens.  Mine took me only 7 minutes and I was ready to pour it into my pre baked crust and chill.  There is no worrying about burning cream filling and it takes less time to prepare than on top of the stove!  After this tasty pie is completely chilled, you can simply whip up some homemade whip cream (you can also use a store bought whipped cream if you like) and then garnish the pie with toasted coconut and lemon zest, slice and serve!  This pie is perfect any day of the week, but would also make a great addition to your Easter dessert table.  Enjoy!</p>

    </div><p id="zlrecipe-ingredients" class="h-4 strong">Ingredients</p><ul id="zlrecipe-ingredients-list"><li id="zlrecipe-ingredient-0" class="ingredient" itemprop="ingredients">FOR THE CRUST:</li><li id="zlrecipe-ingredient-1" class="ingredient" itemprop="ingredients">1 (9) inch pie crust, store bought or homemade, baked and cooled</li><li id="zlrecipe-ingredient-2" class="ingredient" itemprop="ingredients">FOR THE FILLING:</li><li id="zlrecipe-ingredient-3" class="ingredient" itemprop="ingredients">1 (14 oz.) can coconut milk</li><li id="zlrecipe-ingredient-4" class="ingredient" itemprop="ingredients">1 cup heavy cream</li><li id="zlrecipe-ingredient-5" class="ingredient" itemprop="ingredients">zest from 1 lemon</li><li id="zlrecipe-ingredient-6" class="ingredient" itemprop="ingredients">1/2 cup untoasted coconut flakes</li><li id="zlrecipe-ingredient-7" class="ingredient" itemprop="ingredients">3/4 cup granulated sugar</li><li id="zlrecipe-ingredient-8" class="ingredient" itemprop="ingredients">2 eggs</li><li id="zlrecipe-ingredient-9" class="ingredient" itemprop="ingredients">1 egg yolk</li><li id="zlrecipe-ingredient-10" class="ingredient" itemprop="ingredients">1/3 cup all purpose flour</li><li id="zlrecipe-ingredient-11" class="ingredient" itemprop="ingredients">1/4 tsp. salt</li><li id="zlrecipe-ingredient-12" class="ingredient" itemprop="ingredients">FOR THE TOPPING:</li><li id="zlrecipe-ingredient-13" class="ingredient" itemprop="ingredients">Homemade Whipped Cream</li><li id="zlrecipe-ingredient-14" class="ingredient" itemprop="ingredients">(1 cup heavy cream, 2 Tbsp. confectioner's sugar, 1 tsp. vanilla- whip together until stiff peaks are just about to form)</li><li id="zlrecipe-ingredient-15" class="ingredient" itemprop="ingredients">or </li><li id="zlrecipe-ingredient-16" class="ingredient" itemprop="ingredients">Store bought whipped cream</li><li id="zlrecipe-ingredient-17" class="ingredient" itemprop="ingredients">1/2 cup lightly toasted coconut</li><li id="zlrecipe-ingredient-18" class="ingredient" itemprop="ingredients">zest of lemon (optional)</li></ul><p id="zlrecipe-instructions" class="h-4 strong">Instructions</p><ol id="zlrecipe-instructions-list" class="instructions"><li id="zlrecipe-instruction-0" class="instruction" itemprop="recipeInstructions">Mix all of the filling ingredients together in a large, glass mixing bowl.</li><li id="zlrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">Whisk and stir together until incorporated well and place in the microwave for 1 minute intervals, stirring and whisking well after each minute until the filling is cooked, thick and creamy.</li><li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">It took me 7 minutes in my microwave, you may have to do a few minutes more or less depending on your microwave.</li><li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">When the filling is thick, pour into the pie crust and refrigerate for at least 3 to 4 hours or until completely cooled.</li><li id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">Add your whipped cream, toasted coconut and lemon zest (optional), cut and serve!</li><li id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Makes (1) 9 inch pie.</li><li id="zlrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">Store left over pie in the refrigerator- I suggest not adding the toasted coconut until you are ready to serve, because it can lose that nice crunch after it's on the topping and stored in the refrigerator.</li></ol><div class="ziplist-recipe-plugin" style="display: none;">3.1</div><a id="zl-printed-permalink" href="https://www.cozycountryliving.com/easy-lemon-coconut-cream-pie/"title="Permalink to Recipe">https://www.cozycountryliving.com/easy-lemon-coconut-cream-pie/</a></div><div id="zl-printed-copyright-statement" itemprop="copyrightHolder">Copyright  ©2017 Cozy Country Living ®All Rights Reserved</div></div></div></p>
