<p>Every Sunday after my children go to bed I sit down and make a meal plan for the upcoming week.  Sometimes it&#8217;s very detailed, sometimes not.  But I find that if I at least have some type of idea on what I want to cook during the week, my grocery shopping and time in the kitchen goes much smoother.  I love one pan meals or casseroles!  They are comforting, easy to prepare and usually serve our large family well.  I am so excited to share this really tasty One Pan Puerto Rican Style Chicken &amp; Rice with you all, because I think you will love it just as much as my family does.</p>

<p>After shaking a bit of flour into the bag to help prevent it from bursting, place your oven bag into a deep casserole dish or roasting pan and start adding your ingredients!</p>
<p style="text-align: center;">For this Puerto Rican Style Chicken &amp; Rice, I added the ingredients in this order:</p>

<p style="text-align: center;">First I seasoned the fresh chicken thighs and drumsticks well with Adobo Seasoning.</p>

<p style="text-align: center;">Then I added the uncooked seasoned Yellow Rice and Sazón seasoning to the <strong><a href="http://clvr.li/1nRSeWX" rel="nofollow">Reynolds Oven Bag </a> </strong>along with<strong> </strong>the freshly chopped onion, red pepper and garlic.</p>

<p style="text-align: center;">and 4 cups of low sodium chicken broth to the bag along with canola oil.</p>
<p style="text-align: center;">After everything was added to the rice mixture, I lightly and carefully stirred everything together with a plastic spoon.</p>

<p style="text-align: center;">I then placed the chicken on top of the rice mixture evenly and closed the bag with the appropriate tie making sure to leave enough room for the bag to expand while cooking.</p>

<p style="text-align: center;">I cut 6 small 1/2 inch slits into the top or the bag to allow steam to escape.  Then I popped my roasting pan into a 350 degree oven to cook for 1 hour.</p>
<p style="text-align: center;"> After the hour, you can take the roasting pan out of the oven and let it cool for a few minutes before cutting open the top of the bag.</p>

<p style="text-align: left;">My family absolutely loves this meal and using the Reynolds Oven Bags only makes this dish more delicious and easy to make!  This recipe probably serves 8 generously, but most of our family of 6 had seconds!  There was a tiny bit left over for the lunch the next day for us adults.  It was just as good left over and warmed up as it was right from the oven.</p>

<p>Sometimes preparing dinner during the week can be a hassle.  With homework, after school activities and the running around that comes along with it, I am often exhausted when it&#8217;s time to make dinner.  One of my New Year&#8217;s resolutions this year was to be better prepared and organized every day.  For me, this means scheduling household cleaning, grocery shopping, and meals without feeling completely wiped out at the end of the day.  If you are looking for some great printable meal and grocery planners you can find them <a href="http://moneysavingmom.com/downloads/meal-menu-planners">here</a> at Money Saving Mom.  These free planners are very helpful and you can choose from a few different styles to fit your needs.  In fact, these have really helped me stay on top of things in my kitchen.</p>
<p>As most of you know, unfortunately some days just don&#8217;t go as planned.  You can be very organized and ready for the day when one of your children suddenly becomes ill, or your toddler decides to create a huge mural on your wall with marker and you have to spend half the day scrubbing and cleaning up with a Magic Eraser.  Those are the days when all of your plans can go right out the window.</p>
<p>On days like those, One Pot or One Pan Meals are a blessing.  If you have a few great, homemade One Pot or One Pan meals on hand, you can still quickly prepare dinner, place it in the oven and sit down with your family to eat without feeling like a complete mess.  This One Pan Meatloaf and Roasted Potatoes &amp; Carrots is a simple, comforting family meal that can be on the table in an hour.  This moist and flavorful, old fashioned style meatloaf cooks right in the pan with seasoned golden potatoes and fresh carrots for cozy, satisfying meal that can be served along with a salad or steamed green beans.  Sometimes the simple meals are the one&#8217;s that my family tends to enjoy the most.</p>

    </div><p id="zlrecipe-ingredients" class="h-4 strong">Ingredients</p><ul id="zlrecipe-ingredients-list"><li id="zlrecipe-ingredient-0" class="ingredient" itemprop="ingredients">For The Meatloaf:</li><li id="zlrecipe-ingredient-1" class="ingredient" itemprop="ingredients">2 1/4 lbs. ground beef 85% lean (you want some fat in there)</li><li id="zlrecipe-ingredient-2" class="ingredient" itemprop="ingredients">3/4 cup old fashioned oats</li><li id="zlrecipe-ingredient-3" class="ingredient" itemprop="ingredients">2 sliced white bread</li><li id="zlrecipe-ingredient-4" class="ingredient" itemprop="ingredients">1 1/2 cups 2% milk</li><li id="zlrecipe-ingredient-5" class="ingredient" itemprop="ingredients">2 eggs</li><li id="zlrecipe-ingredient-6" class="ingredient" itemprop="ingredients">1 medium onion, finely chopped</li><li id="zlrecipe-ingredient-7" class="ingredient" itemprop="ingredients">1 large clove of garlic, minced</li><li id="zlrecipe-ingredient-8" class="ingredient" itemprop="ingredients">1 1/4 tsp. salt</li><li id="zlrecipe-ingredient-9" class="ingredient" itemprop="ingredients">1/2 tsp. black pepper</li><li id="zlrecipe-ingredient-10" class="ingredient" itemprop="ingredients">1 Tbsp. dried parsley</li><li id="zlrecipe-ingredient-11" class="ingredient" itemprop="ingredients">For The Vegetables:</li><li id="zlrecipe-ingredient-12" class="ingredient" itemprop="ingredients">2 1/2 lbs. small golden potatoes, scrubbed and quartered</li><li id="zlrecipe-ingredient-13" class="ingredient" itemprop="ingredients">4 large carrots, peeled and sliced into chunks to about the size of the potatoes</li><li id="zlrecipe-ingredient-14" class="ingredient" itemprop="ingredients">1/2 Tbsp. olive oil</li><li id="zlrecipe-ingredient-15" class="ingredient" itemprop="ingredients">salt</li><li id="zlrecipe-ingredient-16" class="ingredient" itemprop="ingredients">pepper</li><li id="zlrecipe-ingredient-17" class="ingredient" itemprop="ingredients">1 tsp. dried parsley</li><li id="zlrecipe-ingredient-18" class="ingredient" itemprop="ingredients"></li></ul><p id="zlrecipe-instructions" class="h-4 strong">Instructions</p><ol id="zlrecipe-instructions-list" class="instructions"><li id="zlrecipe-instruction-0" class="instruction" itemprop="recipeInstructions">Preheat the oven to 375 degrees.</li><li id="zlrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">Place the oatmeal and the bread in a small bowl, pour the milk over it and soak for 5 minutes while you prepare the rest of the ingredients.</li><li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">In a large bowl (or you can even use your Kitchen Aid Mixer), combine the meatloaf ingredients and mix well.</li><li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">In a larger 15 x 10 (4 Qt.) Baking Dish, evenly shape the meatloaf, leaving 2 inches all around the sides of the loaf.</li><li id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">In a large bowl combine your potatoes and carrots, drizzle them with the olive oil, and season them with salt, pepper and parsley.</li><li id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Give them a good stir and arrange them evenly around the meatloaf.</li><li id="zlrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">Loosely cover the pan with foil and bake for 30 minutes.</li><li id="zlrecipe-instruction-7" class="instruction" itemprop="recipeInstructions">Remove the foil and continue baking for another 30 minutes or until the top of the meatloaf is lightly browned and a thermometer inserted into the loaf reads 160 degrees F.</li><li id="zlrecipe-instruction-8" class="instruction" itemprop="recipeInstructions">Remove the pan from the oven, cover with foil and let rest for 10 minutes.</li><li id="zlrecipe-instruction-9" class="instruction" itemprop="recipeInstructions">Serve warm with fresh green beans or a salad.</li><li id="zlrecipe-instruction-10" class="instruction" itemprop="recipeInstructions">Serves 6.</li></ol><div class="ziplist-recipe-plugin" style="display: none;">3.1</div><a id="zl-printed-permalink" href="https://www.cozycountryliving.com/one-pan-meatloaf-with-roasted-potatoes-carrots/"title="Permalink to Recipe">https://www.cozycountryliving.com/one-pan-meatloaf-with-roasted-potatoes-carrots/</a></div><div id="zl-printed-copyright-statement" itemprop="copyrightHolder">Copyright  ©2017 Cozy Country Living ®All Rights Reserved</div></div></div></p>
