<p>There&#8217;s nothing I like more on a cold Winter&#8217;s day than a nice warm bowl of soup! Sometimes I just don&#8217;t have a lot of time to prepare a homemade soup or I just don&#8217;t feel like it because I&#8217;d rather be snuggled up warm under a blanket instead of running to the store for ingredients. Usually when I get the idea of soup in my head it&#8217;s last minute. This delicious Slow Cooker Mexican Chicken Soup not only takes just a few minutes to prepare, but it&#8217;s made with things you probably already have in your refrigerator and pantry so you don&#8217;t have to brave the frigid temperatures and head out to the store.</p>
<p><img decoding="async" class="aligncenter size-full wp-image-10894" src="https://d27hwuc9z2lofn.cloudfront.net/wp-content/uploads/2015/02/Chicken-Tomatoes-for-Mexican-Chicken-Soup.jpg" alt="Chicken &amp; Tomatoes for Mexican Chicken Soup" width="680" height="907" srcset="https://d27hwuc9z2lofn.cloudfront.net/wp-content/uploads/2015/02/Chicken-Tomatoes-for-Mexican-Chicken-Soup.jpg 680w, https://d27hwuc9z2lofn.cloudfront.net/wp-content/uploads/2015/02/Chicken-Tomatoes-for-Mexican-Chicken-Soup-225x300.jpg 225w, https://d27hwuc9z2lofn.cloudfront.net/wp-content/uploads/2015/02/Chicken-Tomatoes-for-Mexican-Chicken-Soup-300x400.jpg 300w" sizes="(max-width: 680px) 100vw, 680px" /></p>
<p>My slow cooker has been getting a lot of use lately. I love the convenience of taking a few minutes in the morning to put everything together and then having a warm, comforting meal at the end of the day without any dinner time hassle in the kitchen. Do you use your slow cooker a lot?</p>
<p><img decoding="async" class="aligncenter size-full wp-image-10895" src="https://d27hwuc9z2lofn.cloudfront.net/wp-content/uploads/2015/02/Add-Beans-to-Mexican-Chicken-Soup.jpg" alt="Add Beans to Mexican Chicken Soup" width="680" height="907" srcset="https://d27hwuc9z2lofn.cloudfront.net/wp-content/uploads/2015/02/Add-Beans-to-Mexican-Chicken-Soup.jpg 680w, https://d27hwuc9z2lofn.cloudfront.net/wp-content/uploads/2015/02/Add-Beans-to-Mexican-Chicken-Soup-225x300.jpg 225w, https://d27hwuc9z2lofn.cloudfront.net/wp-content/uploads/2015/02/Add-Beans-to-Mexican-Chicken-Soup-300x400.jpg 300w" sizes="(max-width: 680px) 100vw, 680px" /></p>
<p>Preparing this soup is a breeze. You start by adding boneless, skinless chicken breasts and fire roasted diced tomatoes to your slow cooker. Then you add the green chiles, salsa, pink &amp; black beans, a few spices and some chicken stock. Give it a quick stir and turn on the slow cooker and let it be!</p>
<p><img loading="lazy" decoding="async" class="aligncenter size-full wp-image-10896" src="https://d27hwuc9z2lofn.cloudfront.net/wp-content/uploads/2015/02/Add-Salsa-to-Mexican-Chicken-Soup.jpg" alt="Add Salsa to Mexican Chicken Soup" width="680" height="907" srcset="https://d27hwuc9z2lofn.cloudfront.net/wp-content/uploads/2015/02/Add-Salsa-to-Mexican-Chicken-Soup.jpg 680w, https://d27hwuc9z2lofn.cloudfront.net/wp-content/uploads/2015/02/Add-Salsa-to-Mexican-Chicken-Soup-225x300.jpg 225w, https://d27hwuc9z2lofn.cloudfront.net/wp-content/uploads/2015/02/Add-Salsa-to-Mexican-Chicken-Soup-300x400.jpg 300w" sizes="auto, (max-width: 680px) 100vw, 680px" /></p>
<p>A half an hour before the cooking time is up, take out your chicken to chop or shred it, then add it back to the pot along with a little uncooked pasta, cover and finish cooking.</p>
<p><img loading="lazy" decoding="async" class="aligncenter size-full wp-image-10897" src="https://d27hwuc9z2lofn.cloudfront.net/wp-content/uploads/2015/02/Adding-Pasta-to-Mexican-Chicken-Soup.jpg" alt="Adding Pasta to Mexican Chicken Soup" width="680" height="907" srcset="https://d27hwuc9z2lofn.cloudfront.net/wp-content/uploads/2015/02/Adding-Pasta-to-Mexican-Chicken-Soup.jpg 680w, https://d27hwuc9z2lofn.cloudfront.net/wp-content/uploads/2015/02/Adding-Pasta-to-Mexican-Chicken-Soup-225x300.jpg 225w, https://d27hwuc9z2lofn.cloudfront.net/wp-content/uploads/2015/02/Adding-Pasta-to-Mexican-Chicken-Soup-300x400.jpg 300w" sizes="auto, (max-width: 680px) 100vw, 680px" /></p>
<p>The result is a hearty, filling and tasty soup that your whole family will love! We love to top ours with Extra Sharp Cheese too:)</p>
<p><img loading="lazy" decoding="async" class="aligncenter size-full wp-image-10898" src="https://d27hwuc9z2lofn.cloudfront.net/wp-content/uploads/2015/02/Slow-Cooker-Mexican-Chicken-Soup-for-Dinner.jpg" alt="Slow Cooker Mexican Chicken Soup for Dinner" width="680" height="907" srcset="https://d27hwuc9z2lofn.cloudfront.net/wp-content/uploads/2015/02/Slow-Cooker-Mexican-Chicken-Soup-for-Dinner.jpg 680w, https://d27hwuc9z2lofn.cloudfront.net/wp-content/uploads/2015/02/Slow-Cooker-Mexican-Chicken-Soup-for-Dinner-225x300.jpg 225w, https://d27hwuc9z2lofn.cloudfront.net/wp-content/uploads/2015/02/Slow-Cooker-Mexican-Chicken-Soup-for-Dinner-300x400.jpg 300w" sizes="auto, (max-width: 680px) 100vw, 680px" /></p>
<p>This recipe does make quite a bit of soup, which is perfect for my large family. If you aren&#8217;t cooking for several people, you&#8217;ll be happy to know that this soup is freezer friendly! Just let the soup cool to room temperature and store it in a <a href="http://goo.gl/2XrIAV" rel="nofollow">Glad FreezerWare Container</a> for safe keeping.</p>
