<p>Good Morning!  I hope everyone had a wonderful weekend!  We set our clocks back early Sunday morning and gained an extra hour of sleep:)  I needed it!  I am so happy that my oldest daughter doesn&#8217;t have to get on the school bus in the dark too.  The downside is that it is getting darker much earlier which cuts down on the time I have to work outdoors.  I had all intentions of getting outside and planting more spring flower bulbs, but it was really cold here yesterday so I caught up on housework instead.  I will have to get busy planting in a few days when the weather warms up.  Do you plant bulbs in the fall?  What are your favorite?</p>

<p>Because it was chilly out yesterday, I wanted to warm the house by baking a little something sweet in the oven.  These White Chocolate Cranberry Oatmeal Cookie Bars are a tasty treat that takes only minutes to prepare.  You simply mix up the cookie dough, spread into a 9 x 13 baking dish, bake, cut and serve.  These bars are perfect for a last minute dessert and will feed a crowd.  Left over cookie bars are a nice surprise when they are packed into a school lunch too.   If you&#8217;re a big fan of simple desserts and cookie bars, check out my <a href="http://www.pinterest.com/ccountryliving/">Pinterest</a> boards for more great recipes!  This time of year, it&#8217;s nice to have a few recipes in your recipe box that you can bake your family that don&#8217;t take all day to make.  Enjoy!</p>

<p>Good Morning!  I hope everyone had a wonderful weekend!  The weather here wasn&#8217;t very nice and it was pretty chilly. We had heavy rain, thunderstorms and even some hail!  We are building an addition onto our house and before the rain came on Saturday, my husband along with helpful family members and friends were busy trying to get most of the framing done.  I tried to warm them up with a huge pot of <a title="Freezer Chili" href="https://www.cozycountryliving.com/freezer-chili/">chili</a> for lunch and these yummy Chocolate Chip &amp; <a href="http://www.amazon.com/gp/product/B0007SNZ5C/ref=as_li_tf_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=B0007SNZ5C&amp;linkCode=as2&amp;tag=cozcouliv-20"> English Toffee</a><img decoding="async" style="border: none !important; margin: 0px !important;" src="http://ir-na.amazon-adsystem.com/e/ir?t=cozcouliv-20&amp;l=as2&amp;o=1&amp;a=B0007SNZ5C" alt="" width="1" height="1" border="0" /> Cookie Bars for dessert.  These bars were still warm when I served them and were full of that melted toffee, chocolate goodness.  They are perfect on a cold day with a hot cup of coffee or hot chocolate!   These treats are slightly crisp on the top and bottom with a delicious, gooey inside.  If you are feeling a little naughty, you could even top these warm cookie bars with vanilla ice cream!  Cookie Bars are my go to dessert when I am pressed for time.  They are so simple to make, and they take only minutes to prepare.  If you are in the mood for something warm and sweet to share with your family on a chilly fall evening, give these Cookie Bars a try!  If you aren&#8217;t feeding a crowd, the extra bars can be stored in the freezer or even packed as a surprise in a school lunch:)  Enjoy!</p>

<p>My husband really loves Reese&#8217;s Peanut Butter Cups!  This past Father&#8217;s Day weekend, I decided to incorporate this yummy candy into a cookie bar that my everyone in my family would love.  This peanut better lover&#8217;s dessert is loaded with crunchy peanut butter, miniature Reese&#8217;s Peanut Butter Cups, and of course some semi sweet chocolate chips for those of us who like chocolate in everything:)  These cookie bars are simple to make, take very little time to prepare and can be served warm or at room temperature with a big glass of cold milk.  What a perfect way to end the day!</p>

<p>Before my children get out of school at the end of June, I plan on having my freezer stocked with some great meals, snacks and desserts.  I love &#8220;freezer cooking&#8221; and if you haven&#8217;t done it before you should consider giving it a try.  I really take pride in feeding my family fresh, wholesome food that I made in my kitchen, without all of those preservatives that most frozen, fast,  prepackaged foods have.  I have found that you can freeze a lot of things!  I really want to enjoy the time I spend with my children this summer,  and planning and cooking ahead really seems to help me.  Over the next month, I will be sharing some of my favorite, simple recipes and great freezer cooking plans with you if you would like to follow along.  As mothers, we try to do so many things, that sometimes we feel really burned out at the end of the day.  Planning ahead can take some of that pressure you are feeling away so your busy days this summer can run smoothly and be more enjoyable.</p>
<p>I love a yummy, sweet treat that only takes a few minutes to prepare.  Cookie Bar type desserts are fantastic this time of year because they are quick to make and they feed a crowd.  With a bunch of outdoor activities going on this summer, who has hours everyday to spend baking in the kitchen?   These chewy White Chocolate Macadamia Nut Blondies are delicious.  White Chocolate and Macadamia Nuts just go together, you know?  These bars are perfect for a picnic, or even a bake sale.  They are also perfect with your morning cup of coffee, but I don&#8217;t want to promote this as breakfast:)  These also freeze very well if you want to package some up for later!</p>
