<p>I hope all of you wonderful mothers out there had a very nice Mother&#8217;s Day with the ones you love!   I feel truly blessed that I was able to share that special day with my grandmother, mother and mother-in-law.  If you follow along on <a href="http://instagram.com/shannoncozycountryliving">Instagram</a>, you can see some of the simple fresh flower gifts and center pieces I made for Mother&#8217;s Day using flowers from our yard.  The weather was absolutely gorgeous for picking.  My weekend ended with a lovely, simple dinner, a glass of wine and chocolate cake shared with my special moms!  It was a great day!</p>
<p>Since I really splurged on food yesterday, I&#8217;m back on track today!  It&#8217;s Monday and I always feel like no matter what I ate on the weekend, I can start fresh on Monday Morning.  This simple baked Lemon &amp; Garlic Chicken Breast flavorful, Spring meal served with fresh vegetables or a salad.  The chicken breasts are baked with freshly minced garlic, lemon, parsley and olive oil to give you a delicious, lean entree without sacrificing flavor.</p>

<p>I like to buy a lot of chicken breast when it&#8217;s on sale.  I cook the chicken, cut some of it up and even freeze it for later.  It really comes in handy during the busy work week if I want to put together a quick casserole.  I leave some of the chicken sliced and ready in the refrigerator so I can top my salads with it for lunch too.  If you freezer cook, you can also make a few meals with this chicken and have the whole dish ready to pull out of the freezer any day of the week.  One of our family&#8217;s favorite chicken casseroles that works well with this Lemon &amp; Garlic Chicken is <a title="Chicken Divan" href="https://www.cozycountryliving.com/chicken-divan/">Chicken Divan</a>, but the possibilities are endless.</p>

<p>After a busy weekend, I wanted to start the week off with a nice family meal.  I caught up on household chores in the morning and decided to make something I hadn&#8217;t made in a while- this delicious Crunchy Chicken Cordon Bleu.  I love using <a href="http://www.amazon.com/gp/product/B0086PGTOC/ref=as_li_tf_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=B0086PGTOC&amp;linkCode=as2&amp;tag=cozcouliv-20">Panko Bread Crumbs </a><img loading="lazy" decoding="async" style="border: none !important; margin: 0px !important;" src="http://ir-na.amazon-adsystem.com/e/ir?t=cozcouliv-20&amp;l=as2&amp;o=1&amp;a=B0086PGTOC" alt="" width="1" height="1" border="0" /> in this recipe because it makes a wonderful, crispy, crunchy breading.  During my children&#8217;s nap time, I  took my time assembling the chicken, stuffing it with Virginia Ham and Baby Swiss Cheese.  I love when I can break a more time consuming recipe up into pieces.   I was able to prepare the stuffed chicken and store it in the refrigerator until I was ready to bread them and put them in the oven later in the evening.  Dinner time went smoothly and all I had to do after I had the chicken in the oven, was steam fresh green beans for a side dish.  This meal is simple and filling.  You could even assemble the chicken on the weekend to save you some meal prep time during the busy work week.</p>

Butter & 1 Tbsp. Extra Virgin Olive Oil</li></ul><p id="zlrecipe-instructions" class="h-4 strong">Instructions</p><ol id="zlrecipe-instructions-list" class="instructions"><li id="zlrecipe-instruction-0" class="instruction" itemprop="recipeInstructions">In between plastic wrap, gently pound your chicken to 1/4 inch thickness.</li><li id="zlrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">Layer half a slice of cheese, a piece of ham and the other half of the cheese on the chicken.</li><li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">Tuck in the sides and roll tightly, setting the seam side down on a plate.</li><li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">Don't be afraid to really get in there and make sure these are rolled tight and tucked in.</li><li id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">In a medium sized mixing bowl, combine the panko, garlic powder, salt, pepper, parsley and melted butter.</li><li id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Make a little breading station in a line with a plate of flour, a bowl with the egg wash, and the mixing bowl with the panko breading mix.</li><li id="zlrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">Pre heat your oven to 350 degrees.</li><li id="zlrecipe-instruction-7" class="instruction" itemprop="recipeInstructions">Heat the 1 Tbsp. butter and 1 Tbsp. olive oil in a large cast iron skillet on medium/high heat.</li><li id="zlrecipe-instruction-8" class="instruction" itemprop="recipeInstructions">While holding the seam together, carefully dip the chicken in the flour, then cover in the egg wash, and dip in the panko mixture.  </li><li id="zlrecipe-instruction-9" class="instruction" itemprop="recipeInstructions">I like to place the chicken in the panko mixture seam side down and press it into the bottom and I cover the top with breading and use my hands to kind of squeeze it on the chicken.</li><li id="zlrecipe-instruction-10" class="instruction" itemprop="recipeInstructions">Place the chicken seam side down into the cast iron skillet one at a time until you are finished.</li><li id="zlrecipe-instruction-11" class="instruction" itemprop="recipeInstructions">Let the seam side brown on the stove top.</li><li id="zlrecipe-instruction-12" class="instruction" itemprop="recipeInstructions">Turn off the burner and put the cast iron skillet in the oven and bake for 25-30 minutes.</li><li id="zlrecipe-instruction-13" class="instruction" itemprop="recipeInstructions">Check meat with a meat thermometer.</li><li id="zlrecipe-instruction-14" class="instruction" itemprop="recipeInstructions">Times will vary depending on the thickness of your chicken.</li><li id="zlrecipe-instruction-15" class="instruction" itemprop="recipeInstructions">Serve warm with a fresh vegetable.</li></ol><div class="ziplist-recipe-plugin" style="display: none;">3.1</div><a id="zl-printed-permalink" href="https://www.cozycountryliving.com/crunchy-chicken-cordon-bleu/"title="Permalink to Recipe">https://www.cozycountryliving.com/crunchy-chicken-cordon-bleu/</a></div><div id="zl-printed-copyright-statement" itemprop="copyrightHolder">Copyright  ©2017 Cozy Country Living ®All Rights Reserved</div></div></div></p>
