<p>Baking with citrus always brightens up my day!  This morning when I woke up the temperature was 50 degrees!  Believe me when I say that it felt like a heat wave.  It has been so cold here and for the 1 hour it was 50 degrees I even opened a few of my windows to let some of that fresh air in the the house. It was a little chilly, but I didn&#8217;t care.  By the time I finished cleaning up the children&#8217;s breakfast mess, the temperatures had plummeted again and it was snowing.  Ugh&#8230; I guess it&#8217;s out of my control.  If you are experiencing the same type of winter weather in your neck of the woods, how are you staying cheery when the view outside of your window can become a bit depressing?</p>
<p>This tasty Orange Marmalade Coffee Cake is the perfect cake to cheer you up and enjoy with a hot cup of coffee.  This moist, buttermilk cake has a wonderful orange flavor from the marmalade and orange zest.  The streusel topping is drizzled with a vanilla glaze to make this extra special.  No matter what kind of weather you have, the fresh smell of orange should put a smile on your face.  This recipe makes 2 coffee cakes, so you can have one for the weekend and freeze one for later.  If winter has got you down, brighten up your day and your kitchen with this delightful cake.  Your family will thank you!</p>

4 Tbsp. milk</li></ul><p id="zlrecipe-instructions" class="h-4 strong">Instructions</p><ol id="zlrecipe-instructions-list" class="instructions"><li id="zlrecipe-instruction-0" class="instruction" itemprop="recipeInstructions">Preheat your oven to 350 degrees.</li><li id="zlrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">Grease and line (2) 9 inch cake pans with parchment paper.</li><li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">Set aside.</li><li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">In your Kitchen Aid Mixer, cream the butter and sugar together until fluffy.</li><li id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">Add the eggs, one at a time, beating well after each addition.</li><li id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Add the vanilla and stir.</li><li id="zlrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">Sift the dry ingredients into a medium sized mixing bowl and add them to the mixture alternating with the buttermilk until combined into a nice batter.</li><li id="zlrecipe-instruction-7" class="instruction" itemprop="recipeInstructions">Add the marmalade, the orange zest, and the Tbsp. of orange juice and mix to combine.</li><li id="zlrecipe-instruction-8" class="instruction" itemprop="recipeInstructions">Evenly pour the batter into the prepared pans.</li><li id="zlrecipe-instruction-9" class="instruction" itemprop="recipeInstructions">In your mixer, combine the streusel ingredients and mix until you have pea sized crumbles.</li><li id="zlrecipe-instruction-10" class="instruction" itemprop="recipeInstructions">Sprinkle evenly onto the 2 cakes.</li><li id="zlrecipe-instruction-11" class="instruction" itemprop="recipeInstructions">Bake for 30 - <p>This winter has certainly been one of those for the record books.  Here in Western New York, we are quite use to heavy amounts of snow, but we have had unusually frigid temperatures with wind chills below -20 degrees.  Over the past few weeks though, the weather has warmed up a bit, melting all of the snow and leaving an ugly bare and brown landscape outside of my window.  I don&#8217;t mind the winter, but I really hate the depressing, muddy mess after a meltdown.  When I was grocery shopping the other day I decided I would give the ever so popular Meyer Lemons a try in hopes of brightening up my kitchen on a yucky, dreary day.  If you aren&#8217;t familiar with Meyer Lemons, they are a lovely combination of a lemon and a mandarin orange.  These lemons smell wonderful and are very juicy, and perfect for a cake!</p>
<p>This moist Meyer Lemon &amp; Blueberry Sour Cream Cake has a light, cheery lemon flavor that is bursting with fresh blueberries.  The sweetened fresh citrus glaze adds another layer of flavor and pulls everything together perfectly.  Since I baked this cake in the afternoon, the whole house smelled delicious when everyone was coming home for the day and my family just had to have a piece for dessert that evening!  A slice of this sweet treat on the weekend with a cup of coffee in the morning would also be a nice start to the day <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" />   Whenever you decide to serve this cake, I hope it will brighten your day and put a smile on your family member&#8217;s faces even if it is a cold and unpleasant winter day!</p>

    </div><p id="zlrecipe-ingredients" class="h-4 strong">Ingredients</p><ul id="zlrecipe-ingredients-list"><li id="zlrecipe-ingredient-0" class="ingredient" itemprop="ingredients">3/4 cups unsalted butter, softened</li><li id="zlrecipe-ingredient-1" class="ingredient" itemprop="ingredients">1 1/2 cups sugar</li><li id="zlrecipe-ingredient-2" class="ingredient" itemprop="ingredients">3 eggs</li><li id="zlrecipe-ingredient-3" class="ingredient" itemprop="ingredients">1 tsp. vanilla</li><li id="zlrecipe-ingredient-4" class="ingredient" itemprop="ingredients">zest from 2 Meyer lemons</li><li id="zlrecipe-ingredient-5" class="ingredient" itemprop="ingredients">freshly squeezed juice from 1 Meyer Lemon (about 1/4 cup)</li><li id="zlrecipe-ingredient-6" class="ingredient" itemprop="ingredients">2 cups sour cream</li><li id="zlrecipe-ingredient-7" class="ingredient" itemprop="ingredients">3 1/4 cups all purpose flour</li><li id="zlrecipe-ingredient-8" class="ingredient" itemprop="ingredients">3 tsp. baking powder</li><li id="zlrecipe-ingredient-9" class="ingredient" itemprop="ingredients">1 tsp. baking soda</li><li id="zlrecipe-ingredient-10" class="ingredient" itemprop="ingredients">1/2 tsp. salt</li><li id="zlrecipe-ingredient-11" class="ingredient" itemprop="ingredients">1 1/2 cups fresh blueberries</li><li id="zlrecipe-ingredient-12" class="ingredient" itemprop="ingredients">For The Glaze:</li><li id="zlrecipe-ingredient-13" class="ingredient" itemprop="ingredients">juice from 1 Meyer Lemon (about 1/4 cup)</li><li id="zlrecipe-ingredient-14" class="ingredient" itemprop="ingredients">1 3/4 cups confectioners sugar</li><li id="zlrecipe-ingredient-15" class="ingredient" itemprop="ingredients"> 1 tsp. vanilla extract</li></ul><p id="zlrecipe-instructions" class="h-4 strong">Instructions</p><ol id="zlrecipe-instructions-list" class="instructions"><li id="zlrecipe-instruction-0" class="instruction" itemprop="recipeInstructions">Preheat your oven to 350 degrees.</li><li id="zlrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">In your Kitchen Aid Mixer, cream the softened butter and the sugar until light and fluffy.</li><li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">Add one egg at a time, beating well after each addition.</li><li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">Add the lemon zest, lemon juice and vanilla and mix well.</li><li id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">Add the sour cream and mix until well blended.</li><li id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Sift the flour, powder, soda and salt into a medium sized bowl and slowly add it to the mixture until well blended.</li><li id="zlrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">This batter is thick, so don't worry <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /></li><li id="zlrecipe-instruction-7" class="instruction" itemprop="recipeInstructions">Remove the mixing bowl from the Kitchen Aid and gently stir in the fresh blueberries by hand, being careful not to squish them.</li><li id="zlrecipe-instruction-8" class="instruction" itemprop="recipeInstructions">Pour the batter in to a well greased bundt cake pan evenly and bake for 60-70 minutes (do not over bake) or until a tooth pick inserted in to the cake comes out clean.</li><li id="zlrecipe-instruction-9" class="instruction" itemprop="recipeInstructions">Cool for 15 minutes, then carefully shake the pan to loosen the cake and turn onto a serving plate to continue cooling.</li><li id="zlrecipe-instruction-10" class="instruction" itemprop="recipeInstructions">Whisk together the lemon juice and confectioners sugar (1/4 cup at a time) in a small sauce pan until no lumps remain.  I like to make mine over low heat.</li><li id="zlrecipe-instruction-11" class="instruction" itemprop="recipeInstructions">Whisk in the vanilla extract.</li><li id="zlrecipe-instruction-12" class="instruction" itemprop="recipeInstructions">When the glaze cools and the cake has cooled, pour over the cake. (you can use as little or as much glaze as you like)</li><li id="zlrecipe-instruction-13" class="instruction" itemprop="recipeInstructions">Slice and serve.</li><li id="zlrecipe-instruction-14" class="instruction" itemprop="recipeInstructions">We have enjoyed this cake warm and room temperature and it is very tasty either way.</li><li id="zlrecipe-instruction-15" class="instruction" itemprop="recipeInstructions">Serves 12.</li><li id="zlrecipe-instruction-16" class="instruction" itemprop="recipeInstructions">Enjoy!</li><li id="zlrecipe-instruction-17" class="instruction" itemprop="recipeInstructions">You can even freeze left over pieces individually for later.     </div><p id="zlrecipe-ingredients" class="h-4 strong">Ingredients</p><ul id="zlrecipe-ingredients-list"><li id="zlrecipe-ingredient-0" class="ingredient" itemprop="ingredients">1 3/4 cups all purpose flour</li><li id="zlrecipe-ingredient-1" class="ingredient" itemprop="ingredients">3/4 cup brown sugar, packed</li><li id="zlrecipe-ingredient-2" class="ingredient" itemprop="ingredients">1 1/2 tsp. baking powder</li><li id="zlrecipe-ingredient-3" class="ingredient" itemprop="ingredients">1 tsp. salt</li><li id="zlrecipe-ingredient-4" class="ingredient" itemprop="ingredients">1/2 cup unsalted butter, softened and divided (remainder is saved for the crumb topping)</li><li id="zlrecipe-ingredient-5" class="ingredient" itemprop="ingredients">1 tsp. ground cinnamon </li><li id="zlrecipe-ingredient-6" class="ingredient" itemprop="ingredients">1/2 tsp. ground nutmeg</li><li id="zlrecipe-ingredient-7" class="ingredient" itemprop="ingredients">1/4 tsp. ground cloves</li><li id="zlrecipe-ingredient-8" class="ingredient" itemprop="ingredients">1 tsp. vanilla</li><li id="zlrecipe-ingredient-9" class="ingredient" itemprop="ingredients">2 eggs</li><li id="zlrecipe-ingredient-10" class="ingredient" itemprop="ingredients">1/3 cup buttermilk</li><li id="zlrecipe-ingredient-11" class="ingredient" itemprop="ingredients">1 large baking apples, peeled and sliced very thin</li><li id="zlrecipe-ingredient-12" class="ingredient" itemprop="ingredients">For the Crumb Topping:</li><li id="zlrecipe-ingredient-13" class="ingredient" itemprop="ingredients">Remaining 2 1/2 Tbsp. unsalted butter,softened</li><li id="zlrecipe-ingredient-14" class="ingredient" itemprop="ingredients">1/3 cup all purpose flour</li><li id="zlrecipe-ingredient-15" class="ingredient" itemprop="ingredients">1/3 cup brown sugar</li><li id="zlrecipe-ingredient-16" class="ingredient" itemprop="ingredients">1/4 tsp. cinnamon</li><li id="zlrecipe-ingredient-17" class="ingredient" itemprop="ingredients"></li></ul><p id="zlrecipe-instructions" class="h-4 strong">Instructions</p><ol id="zlrecipe-instructions-list" class="instructions"><li id="zlrecipe-instruction-0" class="instruction" itemprop="recipeInstructions">Preheat the oven to 350 degrees.</li><li id="zlrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">Prepare a 9 inch cake pan or baking dish by buttering, flouring and lining it with parchment paper.</li><li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">Set aside.</li><li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">In your Kitchen Aid Mixer, cream 1/3 cup of the butter and the 3/4 cup brown sugar together.</li><li id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">Add the eggs and vanilla and mix until completely blended together.</li><li id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Add the flour, baking powder, salt, cinnamon, nutmeg and cloves.</li><li id="zlrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">Mix until incorporated.</li><li id="zlrecipe-instruction-7" class="instruction" itemprop="recipeInstructions">Slowly add the buttermilk and stir until it becomes a nice batter.</li><li id="zlrecipe-instruction-8" class="instruction" itemprop="recipeInstructions">Spread half of the batter into your baking dish evenly.</li><li id="zlrecipe-instruction-9" class="instruction" itemprop="recipeInstructions">Layer the apples on top.</li><li id="zlrecipe-instruction-10" class="instruction" itemprop="recipeInstructions">Carefully cover the apples with the remaining batter, trying not to upset the apple layer and smooth it out. *This took a little time...but well worth it:)</li><li id="zlrecipe-instruction-11" class="instruction" itemprop="recipeInstructions">With a fork, pastry blender or your mixer, combine the ingredients for the Crumb Topping until it becomes small ball like crumbles.</li><li id="zlrecipe-instruction-12" class="instruction" itemprop="recipeInstructions">Sprinkle on top of the cake and gently press down with your hand or the back of a spoon.</li><li id="zlrecipe-instruction-13" class="instruction" itemprop="recipeInstructions">Bake for 30-35 minutes or until a tooth pick inserted into the cake comes out clean.</li><li id="zlrecipe-instruction-14" class="instruction" itemprop="recipeInstructions">Cool for 15-20 minutes and then remove to a cooling rack to completely cool. <p>I really like cake.   I am the person at birthday parties who scrapes all of that unnecessary frosting off of the cupcake or cake and leaves only a thin layer because I think the cake is the best part.  My husband and two of my children beg to differ!  It&#8217;s not that I don&#8217;t like frosting, because I do appreciate a nice homemade Buttercream, but for me the cake is where it&#8217;s at.   Cakes usually aren&#8217;t on my dessert menu in the fall because I am too busy happily baking pies and apple crisp.  Earlier this week, I decided to try something new with apples and make this breakfast cake.  This Spiced Apple Breakfast Cake is a moist, melt in your mouth kind of cake that is best served on a chilly morning with a hot cup of coffee.  It&#8217;s bursting with the warm flavors and aromas of fresh apples, raisins, walnuts, cinnamon and nutmeg.  I thinks it&#8217;s absolutely acceptable to eat cake for breakfast as long as it&#8217;s called breakfast cake right?  I mean, it&#8217;s in the name and everything:)    This cake can also be enjoyed after dinner sprinkled with powdered sugar or topped with fresh whipped cream.  If you have any left over, it can also be reheated in a low oven the next day.  I&#8217;ve even packed a piece of this into my children&#8217;s  lunch boxes for a sweet treat!  Do you have a favorite fall cake?</p>

										<content:encoded><![CDATA[<p><img loading="lazy" decoding="async" class="aligncenter size-full wp-image-2273" title="Peachy Breakfast Cake" src="https://d27hwuc9z2lofn.cloudfront.net/wp-content/uploads/2013/05/Peachy-Breakfast-Cake.jpg" alt="" width="640" height="480" srcset="https://d27hwuc9z2lofn.cloudfront.net/wp-content/uploads/2013/05/Peachy-Breakfast-Cake.jpg 640w, https://d27hwuc9z2lofn.cloudfront.net/wp-content/uploads/2013/05/Peachy-Breakfast-Cake-300x225.jpg 300w" sizes="auto, (max-width: 640px) 100vw, 640px" />I really look forward to a slower start to the day on the weekends.  I&#8217;m usually not in a big rush and my house has a more relaxed feel when I wake up on Saturday mornings.  I like to sit on the front porch, sipping coffee and getting a little quiet time in with my husband before my children wake up.  Along with my coffee, I like to splurge and have something a little sweet for breakfast on the weekends.  This cake is not too sweet, but just perfect with that morning cup of Joe.  This Peachy Breakfast Cake is a mouth watering, moist cake, that has a delicate hint of cinnamon along with warm peaches in every bite.  You can make this right in your cast iron skillet (my favorite) or you can use a regular baking dish if you like.  This cake also freezes really well, so sometimes I like to double the recipe and make 2.   I love having an extra cake in the freezer that I can pull out for unexpected guests or a busy weekend.  So take a little time during the week, if you have off or on the weekend to enjoy a cup of coffee, some breakfast cake and some quiet time with a loved one.  It&#8217;s a great way to start to the day:)</p>

    </div><p id="zlrecipe-ingredients" class="h-4 strong">Ingredients</p><ul id="zlrecipe-ingredients-list"><li id="zlrecipe-ingredient-0" class="ingredient" itemprop="ingredients">1 cup flour</li><li id="zlrecipe-ingredient-1" class="ingredient" itemprop="ingredients">1/2 tsp. baking soda</li><li id="zlrecipe-ingredient-2" class="ingredient" itemprop="ingredients">1/2 tsp. baking powder</li><li id="zlrecipe-ingredient-3" class="ingredient" itemprop="ingredients">1/4 tsp. salt</li><li id="zlrecipe-ingredient-4" class="ingredient" itemprop="ingredients">1/2 cup unsalted butter, softened</li><li id="zlrecipe-ingredient-5" class="ingredient" itemprop="ingredients">1/3 cup brown sugar</li><li id="zlrecipe-ingredient-6" class="ingredient" itemprop="ingredients">1/3 cup white sugar</li><li id="zlrecipe-ingredient-7" class="ingredient" itemprop="ingredients">1/2 tsp. cinnamon</li><li id="zlrecipe-ingredient-8" class="ingredient" itemprop="ingredients">1/8 tsp. nutmeg</li><li id="zlrecipe-ingredient-9" class="ingredient" itemprop="ingredients">1 tsp. vanilla</li><li id="zlrecipe-ingredient-10" class="ingredient" itemprop="ingredients">1 egg</li><li id="zlrecipe-ingredient-11" class="ingredient" itemprop="ingredients">1/2 cup buttermilk</li><li id="zlrecipe-ingredient-12" class="ingredient" itemprop="ingredients">1 1/2 cups sliced peaches ( If using frozen peaches, let come to room temperature first)</li><li id="zlrecipe-ingredient-13" class="ingredient" itemprop="ingredients">1/2 Tbsp. raw sugar</li></ul><p id="zlrecipe-instructions" class="h-4 strong">Instructions</p><ol id="zlrecipe-instructions-list" class="instructions"><li id="zlrecipe-instruction-0" class="instruction" itemprop="recipeInstructions">Preheat the oven to 375 degrees.</li><li id="zlrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">Line your cast iron skillet bottom with parchment paper.</li><li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">Sift together the flour, soda, powder and salt and set aside.</li><li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">In a Kitchen Aid Mixer, cream the butte with the sugars.</li><li id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">Add the cinnamon, nutmeg, egg and vanilla and mix together.</li><li id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Alternate adding some of the dry mixture, then some buttermilk; mixing lightly after each addition.</li><li id="zlrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">Pour the batter into your lined cast iron skillet and arrange your peaches on top.</li><li id="zlrecipe-instruction-7" class="instruction" itemprop="recipeInstructions">Sprinkle with raw sugar.</li><li id="zlrecipe-instruction-8" class="instruction" itemprop="recipeInstructions">Bake for 25-30 minutes or until a toothpick inserted into the cake comes out clean.</li><li id="zlrecipe-instruction-9" class="instruction" itemprop="recipeInstructions">Serve warm with coffee.</li></ol><div class="ziplist-recipe-plugin" style="display: none;">3.1</div><a id="zl-printed-permalink" href="https://www.cozycountryliving.com/peachy-breakfast-cake/"title="Permalink to Recipe">https://www.cozycountryliving.com/peachy-breakfast-cake/</a></div><div id="zl-printed-copyright-statement" itemprop="copyrightHolder">Copyright  ©2017 Cozy Country Living ®All Rights Reserved</div></div></div></p>
