I omitted the flour as I am cooking for a family member recovering from surgery who is celiac. Instead I added three diced small potatoes. Something I learned from a cooking school to thicken soups. I could have used sweet potatoes for added nutrition…next time. Thanks for the great recipe.

Hi Julia! I am so sorry this soup did not work out for you. It is meant to be pureed with an immersion blender and be more of a pureed type soup than a hearty one. I don’t know if not adding the onion played a small roll in not bulking it up a bit or not. I have not tried it without onion because it adds so much flavor to the soup.
